Pilaf: Wild Rice Pilaf

List of Ingredients
1/2 cup long grain rice
1/2 cup wild rice
2 cups chicken or vegetable stock
1 small shallot or 2 green onions, minced
1 clove garlic
salt and pepper to taste
herbs to taste - dill, parsley, sage, etc

Recipe
Heat pot with tight fitting lid, spray oil or add oil or margarine. Saute shallot, garlic and until translucent. Be careful not to burn the garlic as it can taste bitter. Add seasonings and herbs, stir. Add stock and bring to a boil. Put in the rice, stir, and bring back up to the boil. Cover, turn heat to low, and cook for 25 minutes. do not remove the cover to "check it." Turn off heat and let stand 10 minutes with the cover still on. Fluff and serve. Serving Suggestions: This rice can be made with a variety of herbs and spices depending on your tastes. It can also be made with other types of stock like beef stock for an entirely new taste. This is also excellent cold when mixed with fish or poultry and served chilled for a light and healthy salad.
