    Popcorn: Amish Caramel Corn

    List of Ingredients

    2 sticks butter
    2 cups brown sugar
    1/2 cup light corn syrup
    1/2 teaspoon cream of tartar
    1 teaspoon baking soda
    2 teaspoons vanilla
    2 gallons unsalted popped corn (dishpan full)

    Recipe

    Combine butter, sugar and syrup with cream of tartar in heavy saucepan, and bring to boil over medium heat. Boil four minutes. Remove from the heat and add baking soda and vanilla; mix well. Pour over popped corn, tossing well to coat. Spread corn in roasting pans and bake at 250ºF for 1 hour. Cool and store in ziplock bags.
