Simply separate the seeds from the pulp, and spread them in a single layer on a parchment-lined baking sheet, disposing of any that are damaged or shriveled. Don't wash the seeds - the bits of pumpkin flesh make them sweet and flavorful. Sprinkle lightly with coarse salt, or with a salt-free seasoning, if desired. Place in a 350ºF oven 5 to 10 minutes; the aroma of the toasted seeds will tell you when they're ready.
