Beer Batter Onion Rings

2 eggs
2 tablespoons oil + more for frying
1 1/4 teaspoons salt
1 pinch turmeric
1 1/2 cups flat beer
2 cups flour
1/4 teaspoon baking powder
essence spice
2 large Bermuda or Spanish onionsRecipe
Whisk together eggs, 2 tbl. oil, salt, turmeric and 1 c. of beer with the flour, baking powder and essence until batter is smooth. Add additional beer if batter is too thick. Let batter stand, covered, at room temp for 4 hours or refrigerate overnight. Remove from fridge 1 hour before using. Slice onions 1/2" to 1/4" thick and separate rings. Heat additional oil in deep fryer to 360ºF. Dip onion rings a few at time in batter. Transfer to hot oil and fry until golden brown on both sides. Drain on paper towels. Serve immediately, or keep warm by placing on wire cookie rack in 275ºF oven. Can be frozen and reheated in toaster oven as needed.
