1/2 cup shredded low-fat cheddar cheese
1 small pickled jalapeno pepper -- chopped
1 medium tomato -- chopped
14 melba rounds or toastsRecipe
In small bowl, combine cheese, jalapeno pepper and tomato. Spoon 1 tablespoon mixture onto each melba round.Place 4 to 6 nachos on microwaveable dish. Microwave on High until heated through, about 45 seconds. Repeat with remaining nachos. (To bake in conventional oven, preheat oven to 400ºF. Bake prepared nachos on a cookie sheet until heated through, about 5 minutes.) Makes 14 servings.
