2 pounds pecan or walnut halves
1/3 cup packed brown sugar
1 dash cinnamon
safflower oil
Recipe
Place nuts in large saucepan and add water to cover. Bring to a boil, then boil for 5 minutes, skimming off solids; drain. Place nuts in bowl and quickly stir in sugar and cinnamon, mixing until all sugar is dissolved. Heat in at least 1/2" oil to 375ºF in large skillet. Add nuts carefully in small batches and cook until golden, 1-3 minutes. Stir and watch closely to avoid scorching. Remove with slotted spoon and spread on wax paper to cool. Do not let nuts dry in clumps. Yield: 6-8 cups.
