Crackers: Peanut Cracker Dippers

When I made this I didn't have any chocolate candy coating, so instead I melted some chocolate chips with a bit of shortening. I dipped the sandwich crachers into it, and then froze them to set them up. The chocolate got melty when left at room temperature, so I stored them in the fridge. They were addictive.
List of Ingredients
8 ounces chocolate candy coating, cut up
48 Ritz crackers
1/2 cup peanut butter
Recipe
Melt chocolate coating in medium saucepan over low heat, stirring constantly. Using half ofthe crackers, spread 1 tsp. peanut butter on each; top with another cracker. Using tongs or 2 forks, dip each cookie into chocolate. Place on wire rack over waxed paper. Cool completely. Makes 24.
