Pretzels: Soft Pretzels

1 package yeast
1/3 cup brown sugar
coarse kosher salt
1 1/2 cups warm water
5 cups flour
baking soda

Grease 2 large cookie sheets and sprinkle with kosher salt. Put about 1 1/2 inches of water in a medium sized pan. For each cup of water, add 1 tsp baking soda. Bring to a gentle boil and heat oven to 475ºF. In small bowl, mix brown sugar with the warm water. Sprinkle yeast over mixture and let rest for 5 minutes.
Measure flour into large bowl, and add liquid all at once, stirring until dough no longer sticks to sides of bowl. Knead on lightly floured surface until stretchy. Pinch off golf ball sized pieces and roll into ropes. Twist ropes into pretzels. May be frozen at this point, but don't thaw.. just drop into water. Immerse in water until they float. Place on cookie sheets. Sprinkle with kosher salt and bake for 8 minutes at 475ºF.
