Snack: Chicken Quesadilla w/ Flavor

2 chicken breasts,
1 8 oz package Mexican blend cheese,
1 can rotel drained,
1 16oz can black beans drained,
1 tbsp ground cumin (optional),
1 tbsp vegetable oil,
1 package of 8" flour tortillas.
Recipe
Cut chicken breasts into small pieces add 1 tbsp of vegetable oil and cook through in a skillet over medium heat. Next add rotel, black beans, cumin, and Mexican cheese to the skillet stirring until cheese is melted and mix is blended together. Then in another skillet over medium to low heat place flour tortilla and spoon in as necessary the melted mix and top with another flour tortilla. Cook for about 3 mins on each side until each flour tortilla is toasted. To serve, cut into quarters and place on a plate. You can also add salsa, sour cream, and/or shredded lettuce
