    Cookie: James' Heath Bar Cookies

    List of Ingredients

    1 sleeve Keebler club or saltine crackers
    2 sticks butter (1 cup)
    1 cup brown sugar
    1 12 oz bag chocolate chips

    Recipe

    Line jelly roll pan (cookie sheet) with foil and spread crackers in one layer. (the new Reynold's nonstick foil works great for this) Melt butter and sugar in saucepan and bring to a boil, stirring constantly till thick and bubbly. Pour this mixture over crackers. Place in oven for 5 minutes at 400¼F. (might bubble up and spill over edge of pan) Remove from oven and immediately sprinkle with chocolate chips, spreading with a knife as they melt. Sprinkle with finely chopped nuts if desired; cool. Place in refrigerator til set, and break into pieces.
