1 frying chicken cut up
1 1/2 c light cream
1 medium onion diced
1/4 c dry sherry
6 Tb butter
salt and pepper
a large frying pan
a covered casserole dish

Preheat the oven to 375 degrees F. Melt the butter in a frying pan. Add the diced onion and the chicken and brown on all sides. Season with salt and pepper while cooking.
Add the chicken to the casserole and add the cream and sherry. Cover the casserole and if it is flameproof bring the liquid to a boil on top of the stove. Put the casserole in the oven and bake for 40 minutes. At the end of this time, you should have a rich, clotted sauce. Serve over rice or noodles.
