Sandwich/Tortilla: Quesadillas

3 flour tortilla
2 slices bacon crisp cooked, crumbled (or use bacon bits)
2 tablespoon butter
1/2 cup cheddar cheese shredded
1/2 cup Monterey jack cheese shredded (or pepper jack)
3 tablespoons green onion thinly sliced
Recipe
On half of each tortilla, sprinkle 1/3 of cheese, bacon and onion. Fold other half over filling, pressing down firmly. Spread one side of each with butter. Place tortillas with butter side up on broiler pan. Broil 2 minutes or til crisp and brown. Turn, spread top with butter, and broil 2 more minutes. Cut each into 4 wedges.
Alternately can cook these in a skillet over medium to medium-high heat until tortilla is browned and crisped. Good served with sour cream, guacamole or salsa as well.
