List of Ingredients
Oil
Butter
2 cloves of garlic, crushed or chopped (if you only have garlic powder, put in one half to one teaspoon at the same time as the cumin and chili powder)
1 onion, chopped or diced
1/2 teaspoon cumin
1/2 teaspoon chili powder (add more if you like it spicier)
1 tomato, diced, or one can of diced/crushed tomatoes (unseasoned: this is cheaper and tastes better)
1 can of black beans (cheapest brand is fine)
salt and pepper
Rice (brown is best, but any kind will do)
Recipe
To make the black beans:
In a saucepan over MEDIUM (NOT high) heat, place a couple of spoon-fulls of oil and a piece of butter. Add the garlic and onion at the same time and stir. Keep stirring every minute or so until the onions are soft. Try not to burn them. Add cumin and chili pepper. Stir for 15 seconds. Add tomatoes and stir one more minute. Add one can of black beans. Stir. Turn down the heat and let the beans heat up, stirring every once in a while so that they don't burn. It will take about 10 minutes. Taste, then add salt and pepper to your liking.Ê Serve with rice (follow instructions on the box.)
