1 cup water
1 tsp honey or sugar
1/3 cup rolled oats
1 Tb lemon juice
1 clove garlic peeled and mashed
1/2 cup plain yogurt
1 large cucumber
paprika
1 Tb minced chives
salt and pepper
2 cups buttermilk
minced green onions
Recipe
Bring the water to a boil and cook the oats for 5 minutes, or according to package directions. Peel the cucumber and slice it.
Combine the cucumber, garlic, chives, buttermilk, honey and lemon juice in a blender or food processor and puree. Stir in the yogurt. Refrigerate for 1-2 hours. Serve garnished with paprika and chopped green onions.
