    Sandwich/Tortilla: Spinach Tortilla

    Recipe Introduction

    This is one of my favorites for a quick lunch

    List of Ingredients

    1/3 to 1/2 of a bag of prewashed baby spinach
    (can use whole leaf spinach, but may need to tear it up)
    2 flour tortillas (I try to get sesame seed tortillas, but have used wheat or plain)
    1/4 cup crumbled goat cheese (or feta)
    butter for skillet
    sesame oil for skillet (optional)

    Recipe

    Heat skillet over medium high heat. Into skillet put about 1 tbl. of butter or margarine, and if you have it then sprinkle in a bit of sesame oil for flavor. Once butter is bubbly, lay one tortilla into skillet. Dump prepared spinach onto top of tortilla, and spread it around so it is somewhat even over surface of tortilla. Sprinkle the crumbled goat cheese over the spinach. Top with remaining tortilla. Cook the tortilla until bottom tortilla is browned and crispy. Carefully flip the tortillas over so you can cook remaining tortilla. May need to add more butter to the pan. Continue cooking until the second tortilla is browned. Carefully slide the tortilla sandwich onto a plate. Cut into wedges for serving.
