Snack: Brie & Mango Quesadillas

List of Ingredients
8 ounces brie cheese rind removed, cut into 1/2-inch cubes
1 large mango cut into 1/2-inch cubes
1 red bell pepper roasted, peeled, seeded and diced
1 (4-oz.) can diced green chiles
1/4 cup finely chopped red onion
3 Tbsp coarsely chopped cilantro
1 jalapeno, seeded and minced
1/4 tsp kosher salt
1/4 tsp fresh ground pepper
8 (6-inch) flour tortillas Recipe
1. Combine the brie, mango, bell pepper, chiles, onion, cilantro, jalapeno, salt and pepper in a medium bowl. Mix well. Divide evenly among the tortillas. Fold the tortillas in half.
2. Heat a large nonstick skillet over medium-high heat and add 1 to 2 filled tortillas. Cook until cheese melts, turning once, about 3 minutes on each side. Cut in half to serve. Repeat until all of the quesadillas are cooked.
