    Chicken Carrot Casserole

    List of Ingredients




    1 fryer chicken (2 1/2 to 3 1/2 lb.)
    2 pkg. chicken Ramen noodle soup mix
    2 medium onions, chopped
    1 (20 oz. or 24 oz.) bag frozen carrots, sliced
    salt, pepper or creole
    seasoning to taste
    5 sticks celery, chopped

    Recipe



    Boil chicken in 5 to 6 cups of water with onions and celery in water until done. When chicken is done, remove from water and debone chicken. Prepare chicken Ramen mix as per directions on pack using chicken stock with onions and celery (minimum 4 cups stock, crushed noodles and seasoning packs) in 5 quart pot. After noodles boil a few minutes, add bag of carrots and chicken meat. Stir and simmer for at least 20 minutes.

    Note: The longer it simmers, the thicker it gets.
    Serves 6 to 10. Cost approximately 40 cents per serving.
