    List of Ingredients




    pork and chicken bones
    at least 6 c. water
    2 Tbsp. grated ginger
    2 cloves crushed garlic
    1 tsp. salt
    dash of m.s.g. (optional)
    4 pkg. instant Ramen or Japanese Udon
    1/4 to 1/2 lb. shelled small shrimp
    8 leaves cut Chinese celery (Napa)
    sliced scallion pieces

    Make 6 cups broth by boiling pork and chicken bones in water until well cooked and soft, about 1/2 to 1 hour. Put in ginger, garlic, salt and m.s.g. Simmer 1/2 hour. Cook Ramen or Udon (without packaged broth); drain. Put shrimp and Napa into broth. Cook at high heat 5 minutes. Place noodles (Ramen or Udon) in large bowls. Pour broth and ingredients on top. Top with chopped scallions for additional color. If broth is made in advance, this is a working day dinner. Serves 4 to 6.
