Rabbit: Cajun Rabbit Stew

2 medium rabbits
8 cups water
1-1/2 tablespoons salt
1-1/2 tablespoons red pepper
1-1/2 cups cooked corn
2 small onions (chopped)
5 small potatoes (quartered)
2-1/2 cups tomatoes (diced)
1/2 pound salt pork
1-1/4 tablespoons butter
1 tablespoon flour
1 tablespoon thyme
1 tablespoon oregano
4 tablespoons Worcestershire sauce
1 teaspoon Peychaud Bitters
5 cloves chopped garlicRecipe
Bring water to a boil in a heavy pot. Add rabbit, salt, pepper and spices. Bring back to boil and add corn, onion, tomatoes and salt pork. Cover and cook on low heat for 1 hour. Add potatoes and cook 30 minutes. Stir occasionally to prevent sticking. Mix flour and butter into paste, and stir into stew.
Simmer about 20 minutes.
