    List of Ingredients




    * 1 boneless loin of venison
    * 3-4 strips bacon
    * 1 cup unsalted butter, softened
    * Grated rind of 1 lemon
    * 2 teaspoons Bovril
    * Dash of Worcestershire sauce
    * 2 garlic cloves
    * Salt and pepper
    * 1 1/2 tablespoons sage
    * Fresh sage leaves
    * Olive oil

    Recipe



    Rub the venison loin with olive oil and tie on the strips of bacon. Whip the butter together with the lemon rind, worcestershire sauce, bovril, sage, salt and pepper. Put the garlic cloves through a press or chop very fine and add to the whipped butter mixture. Place the butter mixture on plastic wrap and shape into a log and freeze for a few hours. Preheat the grill. Grill the venison till it is rare, (internal temperature 120 degrees) and then let stand for 15 minutes. Slice and arrange on a platter. Season with salt and pepper and place a pat of the butter mixture on each slice. Arrange the sage leaves around the platter.
