Venison: Sweetwater Venison Chili

List of Ingredients
Venison, course ground 2lbs
Oil 2T
Onion, diced 1c
Garlic, minced 2T
Red peppers, diced 1c
Green peppers, diced 1c
Chili powder 2T
Ground cumin 1T
Paprika 2 tsp.
Dry oregano 1 tsp.
Cayenne pepper 1/2 tsp.
Crushed tomatoes 1 pt
Brown sugar 2T
Brown sauce 1 pt
Salt to taste
Fresh cracked black pepper 1/2 tsp.Recipe
In a large pot, caramelize the meat. Add onions, garlic and peppers, then sauté. Mix spices and add to the mixture. After stirring, add tomatoes, brown sugar, and brown sauce. Simmer for 1 hour. Serve and garnish with sour cream and grated cheddar cheese.

Brown Sauce Recipe
Ingredients
1 carrot peeled and diced
2oz dripping
1 onion peeled and diced
2oz plain flour
1 ptmeat stock
salt and peppe
Melt the dripping in a heavy-bottomed pan. Add the onion and carrot and soften them in the dripping for about 12 minutes. Stir in the flour and simmer the mixture very gently for about 25 minutes, stirring occasionally. The mixture should turn a rich brown in colour. Remove from the heat, and, stirring all the time, gradually add the stock. Bring to the boil and then cover the pan and simmer the sauce for half an hour. Strain the vegetables out of the sauce, then season the sauce to taste and serve.
