Venison: Venison Bean Soup

1 pound Dried garbanzo beans
1 pound Smoked venison sausage
2 Venison leg shanks
1/4 pound Salt pork
3 large Potatoes, peeled and diced
3 medium Onions, peeled and chopped
3 Tomatoes, diced
3 Celery ribs, chopped
Salt, to taste
Freshly-ground black pepper, to taste
Mild paprika, to tasteRecipe
In a Dutch oven or other similar pot, bring 3 quarts of water to a boil. Add the garbanzo beans and venison sausage and bones. Bring to a boil again, reduce heat to very low, cover the pot tightly, and simmer for about 12 hours. Remove the venison bones, discarding them after you've pulled off and diced the meat.
Add the meat to the pot, along with the potatoes. Dice the salt pork and fry it quickly in a skillet until the pieces are browning and you have some grease. Saute the onions in it, then add them and the browned salt pork to the pot. Cover and simmer for 30 minutes. Add the tomatoes and celery, then simmer for another 30 minutes. Before serving, sprinkle the top with mild paprika.
