    Venison: Venison Salisbury Steak

    List of Ingredients




    5 lbs of back strap tenderloin,  shoulder steaks--elk, deer, moose or antelope 
    2 large onions, cut into thin, long strips 
    2 cups chopped celery
    4 large, fresh tomatoes, 
    or two 8-oz. cans whole, peeled tomatoes 
    zest of 1 lemon and the juice
    1/4 cup olive oil 
    salt & pepper 
    Worcestershire sauce 

    Recipe



    Heat oil in large saucepan and brown steaks on both sides. 
    Add rest of ingredients. 
    Cover, turn heat to medium-low and simmer for 30-45 minutes. 
    Serve fresh over a hot bed of rice or noodles.
