    Venison: Venison Wontons

    List of Ingredients




    One pound of Ground Venison or three quarters of pound of Ground Venison plus one quarter of a pound ground Pork mixed together
    Two tablespoons of light soy sauce
    Two tablespoons of any type of dry white wine,such as chardonnay, chablis,dry sherry, sauvignon blanc, etc
    One half teaspoon dry powdered ginger
    One tablespoon sesame oil
    Two stalks of scallions chopped
    One egg white from a large egg
    One half teaspoon salt and One half teaspoon white pepper
    Four cloves minced garlic
    Wonton wrappers

    Mix first nine ingredients until well incorporated. Place approximately three quarters of a tablespoon of filling in the center of the wonton. Bring up the sides and corners of the wonton as to surround the meat, gently pressing against the outside of the wonton into the filling mixture so the sides and corners adhere to the mixture. The top of the wonton should remain open and the filling visible.

    For steaming you have the choice of oiling a bamboo steamer by spraying with oil or using your hands and lightly coating with vegetable oil or placing wontons on top of small pieces of parchment paper and then on the bamboo steamer.

    Any of these methods will prevent sticking. If you use this method then place your bamboo steamer in a fry pan or wok with two or three cups of liquid, preferably a meat stock to impart more flavor and steam on high heat for about fifteen minutes.

    If a bamboo steamer is not available, place one cup of chicken stock in a fry pan or any type pan that you can cover the wontons completely with (use foil if necessary)and steam on high heat for five to ten minutes or until all liquid is absorbed. Do not overcook or they will be soggy. Check the pan so they are firm.

    Now if you want deep fried Wontons you may cool down your steamed dumplings or refrigerate overnight and heat Peanut Oil to 360 degrees and carefully place wontons in hot oil for just one minute or until golden brown. This will not take long so keep a close eye on them.

    Dip your steamed or fried Venison Wontons into your favorite dipping sauce, which can include soy sauce, soy and ginger, soy and garlic, soy and chinese rice vinegar, a fruit jelly, or peppered jelly, or preserve, wasabi sauce, chinese mustard or anything you can conjure up.
