    Sweets: Judy's Lemon Snowdrops *

    List of Ingredients

    1 cup butter -- softened
    1/2 cup powdered sugar
    1 teaspoon lemon extract
    2 cups flour
    1/4 teaspoon salt

    FILLING:
    1/2 cup sugar
    2 tablespoons cornstarch
    1/2 cup water
    2 tablespoons butter
    2 teaspoons lemon peel -- grated
    3 tablespoons lemon juice
    3 drops yellow food coloring

    Recipe

    Cookies: Mix butter, 1/2 c. sugar and extract. Blend in flour and salt. If dough is soft, cover and chill. Heat oven to 400ºF. Shape dough by level tsp into balls (if use more dough, they're too large!). Place 1" apart on ungreased baking sheet, flatten slightly. Bake 8-10 minutes. Immediately remove from baking sheet and cool.

    FILLING: mix sugar, cornstarch and salt in saucepan. Stir in water gradually. Cook, stirring constantly until mix thickens and boils. Boil and stir 1 minute. Remove from heat, stir in butter and peel, then lemon juice and food coloring. Cool thoroughly. Assembly: Put cookies together in pairs with filling. Roll in powder sugar. Yield: 4 dozen.
