Sweets: Lemon Butter Cookies

List of Ingredients

1/2 cup butter, softened
1/4 cup sugar
1 teaspoon vanilla
1 cup flour
1 tablespoon finely grated lemon zest


Recipe

Cream together butter, sugar and vanilla. Beat in flour until blended. Beat in lemon zest until blended. Shape 1 heaping teaspoon of dough into a ball and flatten to a 1" round. Place on a lightly greased cookie sheet and bake at 325�F until dough is set and just beginning to take on color. Do not allow cookies to get brown. Allow to cool and sprinkle with powdered sugar. Yields about 36 cookies.
