COOKIES:
3/4 cup sugar
1 cup butter, softened
2 teaspoons vanilla
2 teaspoons rum
1 egg
3 cups flour
1 teaspoon nutmeg
FROSTING:
2 cups powdered sugar
3 tablespoons butter, softened
3/4 teaspoon rum extract
1/4 teaspoon vanilla
3 tablespoons milk
Recipe
In large bowl, combine sugar, 1 c. butter, 2 tsp vanilla and 2 tsp rum and egg; beat until light and fluffy. Stir in flour and 1 tsp nutmeg, mixing well. If needed, cover with plastic wrap and refrigerate 30-45 minutes for easier handling. Heat oven to 350ºF. Divide dough into 12 pieces. On lightly floured surface, shape each piece of dough into a long rope, 1/2 inch in diameter, 15" long. Cut into 3" lengths; place on ungreased cookie sheets.
Bake at 350ºF for 12-15 minutes or until bottoms are light golden brown. Immediately remove from cookie sheets and cool completely. In small bowl, combine all frosting ingredients except for nutmeg, adding enough milk for desired spreading consistency. If desired, mark frosting with fork times. Sprinkle lightly with nutmeg. Let stand until frosting is set. Store in tightly covered container.
