Sandwich: Crab Avocado Tea Sandwiches

3 teaspoons mayonnaise
1 teaspoon fresh chives chopped
1 tsp lemon juice
1 cup chopped cooked fresh lump crab (or canned - drain, remove cartilage, and pick over)
1/8 tsp ground white pepper
Dash of salt or kosher salt
2 teaspoons butter softened
8 thin, firm slices of white or wheat bread
1 avocado, halved pit removed, peeled, and sliced
1/2 cup watercress rinsed and dried (remove thick stems)Recipe
Combine mayonnaise, the chives, and the lemon juice in a small bowl.
Add the crab meat and use a fork to blend the mixture well.
Season with salt and pepper.
Butter all bread slices.
To half of the bread slices, top with the avocado slices.
On top of the avocados, add the crab mixture.
Top the crab mixture with watercress.
Top with the remaining bread slices.
Remove the crusts then cut the sandwiches to desired size and shape. (NOTE: You can cut them in triangles, rectangles, squares, or circles.)
If you are not serving these immediately, you can cover them with a damp cloth or cover and refrigerate them for up to one hour.
