    Sandwich: Crab Olive Tea Sandwiches

    8 ounces cream cheese softened
    1/4 pound fresh or frozen crab meat thoroughly drained
    1/2 cup pitted black olives drained and chopped
    40 slices cocktail rye bread or French baguette
    1 medium cucumber peeled and cut into 20 thin slices
    1 bunch fresh watercress sprigs (about 40 ounces)
    1 tablespoon coarsely shredded lemon peel

    Recipe



    In a large bowl, beat cream cheese until smooth.
    Stir in crab meat and olives until well combined.
    Spread 1 teaspoon of crab mixture onto each bread slice
    Top 20 of the bread slices with 1 cucumber slice and 1 watercress sprig.
    Sprinkle lemon peel atop watercress.
    Top with remaining bread slices to form sandwiches. Yield: 20
