Sandwich: Date & Nut Cream Cheese Tea Sandwiches

6 ounces Cream cheese at room temperature
1/4 cup Finely diced pitted dates (about ; 4 dates)
2 tablespoons Finely chopped walnuts
1 tablespoon Finely grated carrot
16 Thin slices best-quality whole-wheat bread
3 tablespoons Unsalted butter at room temperature
Recipe
1. In a small bowl, mix together the cream cheese, dates, walnuts, and carrot.
2. Spread one side of each slice of bread with 1/2 teaspoon butter. Gently spread 1 tablespoon of the cream cheese mixture over the buttered side of 8 slices of bread. Top with the remaining 8 slices, buttered side down.
3. Carefully cut the crusts from each sandwich with a long, sharp knife. Cut the sandwiches in half diagonally.
Makes 8 whole sandwiches or 16 halves
