8 ounces feta cheese
2 tablespoons fresh mint chopped
2 tablespoons lemon juice
1 tablespoon lemon zest
1 loaf dark pumpernickel bread Recipe
In a medium bowl, mix together feta cheese, fresh mint, lemon juice, and zest. Set aside or refrigerate until ready to use.
Cut out daisy shapes from pumpernickel. Spread 1-2 tablespoons of the cheese mixture on top of each cut out. Garnish with fresh violets and mint leaves. (Pansies also may be used if violets are not available.)
Makes about 48 open-face sandwiches.
