Sweets: Lemon Curd Coffee Cake

1 tbsp. active dry yeast
1/4 cup warm water 105F to 115F
1/3 cup sugar
1/2 cup sour cream
1/2 tsp. grated lemon rind
1/4 tsp. salt
2 eggs
2 1/2 to 2 3/4 cups white flour
1/3 cup soft butter
1 egg, slightly beaten
3/4 cup lemon curd (ready-made)

1. In a small bowl, beat the eggs lightly and set aside.
2. Grate 2 tsps. yellow zest and squeeze 1/2 cup juice from the lemons. Place the zest, juice, sugar and butter in a heat-proof bowl. Set over a pan of simmering water. Whisk mixture until butter is melted and sugar dissolves.
3. Slowly whisk 1/2 cup of this lemon mixture into the eggs, then pour egg mixture in a slow steady stream back into the lemon mixture, whisking constantly over the simmering water. Continue stirring until mixture thickens and coats back of spoon, about 10 to 15 minutes. Strain.
4. Refrigerate for 4 hours or until set. Serve curd with toast.
