Cookies:
2/3 cup sugar
1 cup softened butter
1 egg
1/2 tsp salt
1 tsp vanilla extract
2 1/4 cups all purpose flour
1 1/2 tsp grated lemon peel
1 to 2 drops yellow food coloring ; (optional)
Glaze:
1 1/2 cups powdered sugar ; sifted
3 -4 tbs milk
1 small drop yellow food coloring ; (optional)
Garnish:
Pre made tiny candy flowers or tiny frosting flowersRecipe
Heat oven to 350. In large mixer bowl combine sugar, butter, egg, salt and vanilla extract. Beat at med speed scraping bowl often until very light and creamy. By hand, stir in flour until well mixed. In small bowl place 3/4 cup of dough. By hand stir in lemon peel and food coloring.
Shape this flavored dough into 36 1/2" balls. Divide remaining dough into 36 pieces. Place 1 lemon ball in center of each piece of dough and shape into 1" balls, making sure lemon ball is covered. Place 2" apart on cookie sheets and bake for 15-18 minutes or until edges are lightly browned. Cool completely. In med bowl stir together all glaze ingredients. Dip top of each cookie into glaze and let excess drip off. If needed, add a few drops of milk to glaze if it becomes too thick. Garnish with flower candies or frosting flowers.
