    Sweets: Mini Almond Pastries

    1/4 cup powdered sugar
    1/4 cup butter softened
    1 tube almond paste (3 1/2 oz)
    2 egg yolks
    2 tsp grated lemon peel
    1/2 tsp almond extract
    1/4 cup sugar
    1 package frozen puff pastry thawed ; (17.25 oz 2 sheets)

    In small mixer bowl combine all ingredients except granulated sugar and pastry. Beat at low speed and scrape bowl often until well mixed. Set aside.

    Sprinkle 1 tbs sugar on rolling surface. Unfold 1 sheet of puff pastry onto sugared surface. Sprinkle with another 1 tbs sugar. Roll to 12 inch square. Cut square into 2 rectangles (12x6) Spread 1/4 of almond mix on each rectangle. Fold 1/2 inch of both 12 sides in toward center of pastry. Continue folding both 12 in sides 1/2 inch at a time until they meet in the center, then fold one over the other and firmly press layers together.
    Repeat with other rectangle.
    Repeat all with second pastry sheet.
    Wrap each roll in plastic wrap and chill at least 2 hours.

    Heat oven to 400 and cut pastry rolls into 1/2 inch slices. Place 2 inches apart on greased cookie sheets. Bake 7-11 minutes or until lightly browned. Remove from pan right away.
