Quick Lemon Poppy Seed Cake

1 18 ounce package lemon cake mix
1 cup soft silken tofu, pureed
1/2 cup water
2 tablespoons fresh lemon juice
1 tablespoon grated lemon zest
2 tablespoons poppy seeds Recipe
Preheat oven to 350¼F. Spray 2 round baking pans with cooking spray. Blend together cake mix, tofu, water, lemon juice, lemon zest and poppy seeds. Beat 2 minutes. Pour batter into prepared pans and bake 30-35 minutes or until center springs back when lightly pressed. Cool in pans on wire rack 10 minutes. Remove from pans and place on wire rack to finish cooling. Cut into wedges to serve. Makes 12 servings. Can use white cake mix instead.
