Cheesecake: 3 Step Lemon Cheesecake Bars

1 1/2 cups soft coconut macaroon cookie crumbs
2 tablespoons butter, melted
16 ounces cream cheese, softened
1/2 cu sugar
1 tablespoon fresh lemon juice
1/2 teaspoon vanilla
1/2 teaspoon grated lemon rind
2 eggs
Recipe
MIX crumbs and butter. Press onto bottom of greased foil-lined 8-inch square baking pan. Mix cream cheese, sugar, lemon juice, vanilla and lemon peel with electric mixer on medium speed until well blended. Add eggs; mix until blended. POUR cream cheese mixture over crust. BAKE at 350ºF for 20 to 25 minutes or until center is almost set. Cool. Refrigerate until ready to serve. Garnish with lemon slices and sweetened whipped cream.
