Almond: Almond Bars

BASE:
1 cup flour
1 1/2 tablespoons sugar
1/4 teaspoon salt
8 tablespoons unsalted butter, cold, cut into 8 pieces
1 1/2 tablespoons cold water
TOPPING:
1 cup heavy cream
1 cup sugar
2 teaspoons grand marnier, or amaretto
1 cup slivered almonds
Recipe
Preheat oven to 375ºF and grease a 9" square baking pan. Place flour, sugar and salt in food processor and mix well. Scatter butter over flour and process until mixture looks like coarse meal, about 20 seconds. With machine running, add cold water through the feed tube and process 15 seconds. Press dough evenly over bottom of prepared pan (it will be thin). Place pan on center rack of oven and bake until lightly golden, about 20 minutes. Then remove pan from oven and raise heat to 400ºF.
Let base cool while you prepare the topping: Place cream, sugar and amaretto in medium. size saucepan and cook over medium. low, whisking occasionally, until it comes to a rolling boil, 2-3 minutes. Remove pan from heat, stir in almonds, and allow mixture to sit for 15 minutes. Pour warm topping mixture over base, making sure almonds are evenly distributed. Bake on center rack of oven until light golden, 25-30 minutes. While bars are still hot, use point of sharp knife to free edges from sides of pan. Then allow bars to sit for 20 minutes before cutting into 2 1/4" squares. Makes 16 bars.
