Zucchini: Best Zucchini Bars

BARS:
2 cups sugar
1 cup oil
3 eggs
2 cups flour
1 teaspoon cinnamon
1 teaspoon salt
2 teaspoons baking soda
1/4 teaspoon baking powder
1 teaspoon vanilla
2 cups shredded, unpeeled zucchini
1 small carrot, grated
3/4 cup rolled oats
1 cup walnuts, chopped
FROSTING:
1/2 cup soft butter
1/4 teaspoon almond extract
2 teaspoons vanilla
2 1/2 cups powdered sugar
3 ounces cream cheese, softened
Recipe
Beat together sugar, oil and eggs in food processor. Beat in flour, cinnamon, salt, soda, baking powder and vanilla. Beat until well mixed. Fold in zucchini, carrot, oats and nuts; mix well. Pour into 15x10 inch pan with sides. Bake at 350ºF for 15-20 minutes. Make frosting by beating all ingredients together till smooth. Set aside. Cool bars, then frost and cut into bars. Yield: 3 dozen.
