Carot: Carl's Carrot Bars

2 1/2 cups all-purpose flour
2 cups sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups cooking oil
4 slightly beaten eggs
3 4 ounce jars strained carrots (baby food)
1 cup chopped nuts
1/2 cup butter -- softened
1 3 ounce pack cream cheese -- softened
1 teaspoon vanilla
3 cups sifted powdered sugar
Recipe
Grease a 15x10x1-inch baking pan; set aside. Combine flour, sugar, cinnamon, baking powder, baking soda, and salt. Add oil, eggs, and carrots. Beat with an electric mixer until combined. Stir in nuts. Pour into prepared pan. Bake in a 350ºF oven about 30 minutes. Cool in pan on wire rack. Meanwhile, for frosting, beat butter, cream cheese, and vanilla until light and fluffy. Gradually add 2 cups powdered sugar, beating well. Beat in remaining powdered sugar. Frost bars. Store bars, covered, in refrigerator. Serves 24.
