    Coconut: Chocolate Coconut Meringue Bars

    List of Ingredients

    3/4 cup butter
    3 ounces chocolate chips
    1 cup brown sugar
    2 egg yolks
    1 teaspoon vanilla
    1 3/4 cups flour
    1/4 teaspoon salt
    1 cup coconut
    2 egg whites
    1/2 cup sugar
    1/2 cup finely chopped almonds or pecans
    2 tablespoons coconut

    Recipe

    In a medium heavy saucepan, heat butter and chocolate over medium heat until melted, stirring frequently. Stir in brown sugar, egg yolks and vanilla. Using a wooden spoon, beat lightly until just combined. (Do not over beat or bars will fall when baked.) Stir in the flour, salt and 1 cup coconut. Spread batter in a greased 9-inch square baking pan. Bake at 350�F for 25 minutes.

    In a medium mixing bowl, beat the egg whites on high speed until soft peaks form. Gradually beat in the sugar, 1 tablespoon at a time, until stiff peaks form and sugar is almost dissolved. Spread over hot crust. Sprinkle with chopped almonds and coconut. Bake at 350�F for 15 to 20 minutes more, or until meringue is set and lightly browned. Cool in pan on a rack. Cut into bars. Makes about 16.
