    Coconut: Chocolate Coconut Meringue Bars

    List of Ingredients

    3/4 cup butter
    3 ounces chocolate chips
    1 cup brown sugar
    2 egg yolks
    1 teaspoon vanilla
    1 3/4 cups flour
    1/4 teaspoon salt
    1 cup coconut
    2 egg whites
    1/2 cup sugar
    1/2 cup finely chopped almonds or pecans
    2 tablespoons coconut

    Recipe

    In a medium heavy saucepan, heat butter and chocolate over medium heat until melted, stirring frequently. Stir in brown sugar, egg yolks and vanilla. Using a wooden spoon, beat lightly until just combined. (Do not over beat or bars will fall when baked.) Stir in the flour, salt and 1 cup coconut. Spread batter in a greased 9-inch square baking pan. Bake at 350ºF for 25 minutes.

    In a medium mixing bowl, beat the egg whites on high speed until soft peaks form. Gradually beat in the sugar, 1 tablespoon at a time, until stiff peaks form and sugar is almost dissolved. Spread over hot crust. Sprinkle with chopped almonds and coconut. Bake at 350ºF for 15 to 20 minutes more, or until meringue is set and lightly browned. Cool in pan on a rack. Cut into bars. Makes about 16.
