    Coffee: Frosted Coffee Creams

    List of Ingredients

    1/2 cup shortening
    1/2 cup brown sugar
    1/2 cup sugar
    2 eggs
    1 cup flour
    1/4 teaspoon salt
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon cinnamon
    1/2 teaspoon ginger
    1/2 teaspoon nutmeg
    1/2 cup cold coffee
    1/2 teaspoon vanilla
    1/2 cup nuts

    Recipe

    Cream shortening with beater; add sugar and continue beating. Add eggs; beat until light and fluffy. Sift together flour, salt, soda, b.pwd, and spices. Add to first mixture alternately with coffee. Add vanilla and nuts. Spread 1/4 inch thick in greased shallow pans, 10 x 15 inch pan. Bake at 350ºF for 25 minutes. Frost while hot with coffee butter icing and cut into bars when cool. Makes about 30.

    Coffee Butter Icing: Cream 1/2 cup butter, and add about 2 cups sifted confectioners sugar. Add alternately, 1/4 cup strong coffee and about 2 more of the sifted sugar, until mixture is spreadable. Add a dash of salt, spread on creams, and decorate with halves of nuts.
