Pumpkin: Frosted Spicy Pumpkin Bars

2 cups sifted flour
4 teaspoons baking powder
1 1/4 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
1/2 teaspoon salt
1/2 cup shortening
1 cup brown sugar, packed
1/4 cup sugar
4 eggs
16 ounces canned pumpkin
Recipe
Sift together flour, baking powder spices and salt; set aside. Cream together shortening, brown sugar and sugar in bowl until light and fluffy, using electric mixer at medium speed. Add eggs, one at a time, beating after each addition. Beat in pumpkin. Gradually stir dry ingredients into creamed mixture, mixing well. Spread mixture into greased 15 1/2 x 10 1/2 x 1 inch jelly roll pan. Bake in 350�F oven 30 minutes or until top springs back when touched lightly with finger. Cool in pan or rack. Prepare and frost with Cream Cheese Icing.
Cream Cheese Frosting: Combine in bowl: 1 (3 oz.) pkg. softened cream cheese, 1 T. margarine, 2 1/2 cups sifted powdered sugar, 1 tsp. grated lemon rind, Pinch of salt, 1 T. milk. Stir until smooth with spoon. May sprinkle chopped walnuts on top of bars if you wish.
