    Pumpkin: Frosted Spicy Pumpkin Bars

    List of Ingredients

    2 cups sifted flour
    4 teaspoons baking powder
    1 1/4 teaspoons cinnamon
    1 teaspoon nutmeg
    1 teaspoon ginger
    1/2 teaspoon salt
    1/2 cup shortening
    1 cup brown sugar, packed
    1/4 cup sugar
    4 eggs
    16 ounces canned pumpkin

    Recipe

    Sift together flour, baking powder spices and salt; set aside. Cream together shortening, brown sugar and sugar in bowl until light and fluffy, using electric mixer at medium speed. Add eggs, one at a time, beating after each addition. Beat in pumpkin. Gradually stir dry ingredients into creamed mixture, mixing well. Spread mixture into greased 15 1/2 x 10 1/2 x 1 inch jelly roll pan. Bake in 350ºF oven 30 minutes or until top springs back when touched lightly with finger. Cool in pan or rack. Prepare and frost with Cream Cheese Icing.

    Cream Cheese Frosting: Combine in bowl: 1 (3 oz.) pkg. softened cream cheese, 1 T. margarine, 2 1/2 cups sifted powdered sugar, 1 tsp. grated lemon rind, Pinch of salt, 1 T. milk. Stir until smooth with spoon. May sprinkle chopped walnuts on top of bars if you wish.
