Cheesecake: Key Lime Cheesecake Squares

CRUST:
1/2 cup graham wafer crumbs
1/2 cup vanilla wafer crumbs
1/4 cup ground almonds
1/4 cup butter
FILLING:
8 ounces cream cheese
1/2 cup sugar
1 large egg
1/2 cup fresh squeezed lime juice
2 teaspoons grated lime rind
1 tablespoon flour
Recipe
CRUST: Preheat oven to 350ºF. In a mixing bowl, combine graham wafer crumbs, vanilla wafer crumbs and ground almonds. Cut in margarine, using a pastry blender or a fork until mixture is crumbly. Coat an 8 x 8-inch ovenproof baking dish with a no-stick cooking spray, then dust lightly with flour. Discard any excess flour. Press crust mixture firmly in bottom of baking dish. Bake for 15 minutes or until set.
CHEESECAKE: In a mixing bowl, using an electric mixer, beat softened cream cheese, sugar, egg, lime juice and grated lime zest until smooth and creamy. Spread evenly over baked crust. Bake cheesecake at 350ºF for 15 to 20 minutes or until set. Cool on wire rack. Chill in refrigerator before cutting into 2-inch squares.
