    Lemon: Lemon Crumb Bars

    List of Ingredients

    1 package lemon or yellow cake mix
    1/2 cup butter softened
    1 egg + 3 yolks
    2 cups fine crushed saltines
    1 can sweetened condensed milk
    1/2 cup lemon juice

    Recipe

    In large mixing bowl, beat cake mix, butter and 1 egg until crumbly. Stir in saltine crumbs. Reserve 2 c. crumb mixture; press remaining crumbs on bottom of greased 13x9 inch baking pan. Bake at 350ºF for 20 minutes. Beat egg yolks, milk and lemon juice with mixer. Spread over prepared crust. Top with reserved crumb mixture. Bake at 350ºF for 25 minutes or until set. Cool and cut into bars. Store covered in fridge. Yield: 24-36 bars.
