Lemon: Lemon Meringue Bars

1 package pie crust mix
1/4 cup sugar
4 eggs
1 cup sugar
1 1/2 teaspoons lemon peel
1/4 cup lemon juice
1 tablespoon flour
2 egg whites, room temp
1/4 teaspoon cream of tartar
3 tablespoons sugar
Recipe
Preheat to 350ºF. Grease an 11x7 baking pan. Blend crust mix,and 1/4c. sugar and 1 egg. Pat evenly in pan. Bake for 10 minutes. Beat rest of eggs, and 1 cup sugar. Beat in peel, and juice, pour over crust, then bake for 15 minutes. Beat whites and tartar til frothy. Beat in rest of sugar, until still peaks form. Raise temperature to 450ºF. Spread with meringue. Bake for 5 minutes, til golden brown. NOTES : a 13x9 is just a touch to big, to get a good thickness.
