    Lemon: Macadamia Lemon Bars

    List of Ingredients

    1 cup flour
    1/2 cup butter, softened
    1/4 cup powdered sugar
    1/4 cup chopped macadamia nuts
    1 cup sugar
    2 teaspoons grated lemon rind
    2 tablespoons lemon juice
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    2 eggs
    2 tablespoons chopped macadamia nuts

    Recipe

    Heat oven to 350ºF. Mix flour, butter, powdered sugar and 1/4 cup nuts in bowl. Press on bottom and 1/2 inch up sides of ungreased 9" square pan. Bake for 20 minutes. Beat remaining ingredients except for 2 tbl. nuts until light and fluffy; pour over baked layer. Sprinkle with the remaining nuts. Bake for 20-25 minutes or until no indentation remains when touched lightly in center. Cool and cut into bars. Makes 24 bars.
