    Gold Medal Holiday Cookies

    List of Ingredients




    1 1/2 cups vanilla wafer crumbs -- about 40 cookies
    1/4 cup melted butter
    3/4 cup heavy cream
    6 ounces semisweet chocolate chips -- *see Note
    3 eggs
    1/3 cup sugar
    1/8 teaspoon salt

    Topping:
    1/2 cup semisweet chocolate chips
    1 tablespoon shortening

    Heat oven to 350ºF. Mix crumbs and butter with a spoon. Press in an ungreased 8x8" or 9x9" square pan. Bake 10 minutes. Heat cream and 1 1/2 cups chips over low heat, stirring frequently, until chips are melted; remove from heat and cool 5 minutes. Beat eggs, sugar and salt in large bowl with wire whisk until foamy. Pour chip mixture into egg mixture, stirring constantly. Pour over baked layer. Bake 25 to 35 minutes or until center springs back when touched lightly. Cool 15 minutes. Spread with topping. Refrigerate uncovered about 2 hours or until chilled. For bars, cut into 6 rows by 6 rows. Store covered in refrigerator. Topping: melt ingredients over low heat, stirring frequently.
