    Pecan Cherry Bar Cookies

    3/4 cup butter, softened
    1 egg yolk
    3/4 cup sugar
    1 3/4 cups flour, sifted
    1 teaspoon vanilla
    1 lightly beaten egg white
    1 cup chopped pecans
    3 tablespoons finely chopped maraschino cherries

    Recipe



    In a bowl combine butter, egg yolk, sugar, flour and vanilla. Beat mixture until just blended. Do not overbeat. Pat dough evenly into a lightly greased 10x15 inch cookie pan. Brush top lightly with beaten egg white. Sprinkle top with chopped pecans and chopped cherries. Pat nuts and cherries gently into the dough. Bake in a 350ºF oven until top is lightly browned, about 25 minutes. Remove from oven and cut into 1 1/2 inch squares while still warm. Remove from cookie pan. Yields 60 cookies.
