    Pumpkin: Pumpkin Bars & Cream Cheese Frosting

    2 cups flour
    1 1/2 cups sugar
    2 teaspoons baking powder
    2 teaspoons cinnamon
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/4 teaspoon ground cloves
    4 beaten eggs
    1 16 ounce can pumpkin
    1 cup oil

    FROSTING:
    6 ounces cream cheese
    1/2 cup softened butter
    2 teaspoons vanilla
    4 3/4 cups sifted powdered sugar

    Recipe

    Combine flour, sugar, baking powder, cinnamon, soda, salt, and cloves. Stir in eggs, pumpkin, and cooking oil till thoroughly combined. Spread batter into an ungreased 15x10x1 in baking pan. Bake at 350ºF for 25 to 30 min or till a toothpick inserted near the center comes out clean. Cool on wire rack. Frost with Cream Cheese Frosting. Cut into bars. Makes 48 bars.

    For frosting: In a bowl beat together cream cheese, margarine or butter, and vanilla till light and fluffy. Gradually add 2 cups powdered sugar, beating well. Gradually beat in enough remaining powdered sugar to make frosting of spreading consistency.
