Raspberry: Raspberry Bars on Butter Cookie Crust

1 3/4 cups flour
3/4 cup sugar
3/4 cup ground almonds
1/2 cup butter
1 egg, beaten
1/2 lemon, grated, about 1 1/2 tbl. fruit, -- juice and peel
1 cup raspberry jam
Recipe
In the large bowl of an electric mixer, beat together first 4 ingredients until mixture resembles coarse meal. Beat in the egg and lemon until just blended. Set aside 2/3 cup of dough, wrap and refrigerate. With floured hands, pat the remaining dough into a lightly buttered 9x9 inch baking pan. Dough is very soft. Bake at 350ºF for 15 minutes.
Spread top of crust with raspberry jam. Divide the reserved dough into 8 pieces and with floured hands, roll and pat dough out into 9" strips. Lay the strips over the jam lattice-fashioned. Bake at 350ºF for 30 to 35 minutes or until top is golden brown. Allow to cool and then cut into 3x1 1/2 inch bars. Makes 18 cookies.
